Hi my girls!!!
It’s officially Fall, and although it’s still somewhat warm in Las Vegas, I’m pretending like it’s chilly and making ALL of the fall meals.
I’m no food blogger, BUT I do know my way around the kitchen, and when I made up this recipe last night and every single one of my kids took seconds AND thirds, I knew I had to type it up and share it with you!!!
Let’s get right to it!
Ingredients:
1.5 cups cornbread mix
1/2 cup milk
1 egg
1 lb ground beef
1 onion, chopped
1 can of corn, drained
1 can diced tomatoes with green chilies, drained
1 can black beans, rinsed and drained
1 can tomato sauce, 8 oz
1 packet taco seasoning
2 cups sharp cheddar cheese, shredded
Directions:
Preheat oven to 375, and spray 8×8 baking dish with cooking spray
Mix together cornbread mix, milk, egg, & half of the can of corn
Pour batter into prepared baking dish
Brown ground beef & onion, then turn off heat & drain
Add the rest of the corn, diced tomatoes, black beans, tomato sauce, taco seasoning, and one cup of cheese
Mix
Pour over the uncooked cornbread batter mixture
Top with remaining cup of cheese
Bake for 20-25 minutes
Top with sour cream, avocados, crushed chips, and serve!
